Item #0265: Tahini (also known as sesame butter) has been used for over 3,000 years by Middle Eastern cultures to thicken soups, make dressings, dips, sauces, pastes, and desserts. Enjoy Artisana's handcrafted version of this time-honored Middle Eastern favorite.

Tahini, made from husked (out-of-shell) sesame seeds, is a great component of a healthy vegan diet as it is an excellent source of Calcium, Iron, and vitamin B, and two tablespoons contain 6 grams of protein.

Raw, Organic Sesame Tahini can liven up almost any kind of recipe. Use it to make hummus (either traditional garbanzo bean hummus, sprouted garbanzo hummus, or even nut-based hummus--cashews work great), rich, yummy salad dressings, sauces and dips, desserts, etc.

Jolie's Basic Raw Tahini Dressing (from the book Raw Power!)

Because raw tahini can sometimes be slightly bitter compared to toasted seed tahini, I cut whatever bitterness there may be with a date.

2/3 cups raw sesame tahini
1 cup water (can add more if you desire a lighter dressing, or less if you want more of a cream sauce)
1/4 cup fresh-squeezed lemon juice
1-2 cloves garlic
1 tsp sea salt
1 pitted date
1 tsp Nama Shoyu (also cuts any bitterness from the raw tahini)
1 tiniest pinch of cayenne pepper power (optional)

Blend all ingredients in Vita-Mix (Item #0398) or blender until smooth. Serve over green salad, finely shredded cabbage salad, raw falafel, etc.
